Grill to impress with this BBQ chicken recipe, and challenge the "boring grilled chicken" myth. 1kg tawook chicken thighs (not cubed)
1/4 cup chopped coriander
1/4 cup AKKA vinegar
1/4 cup honey
1/4 cup corn oil
1 tbsp minced ginger
1 tbsp minced garlic
1 lemon juice
Salt to taste
1/2 cup honey
1 tbsp AKKA pomegranate vinegar
Salt and pepper to taste
Place your chicken thighs in a bowl with all your marination ingredients and mix till incorporated. Set aside for 1 hr (preferably overnight).
In a small sauce pan, mix your glaze ingredients and bring to a boil then set aside. Place chicken on the grill, and cook both sides. Right before done, brush with honey glaze on both sides and give it a quick flash of fire on the grill. Finally, take off the grill and generously brush with the glaze again, and let rest for 3-5 minutes before serving.
Try out some sumac pickled onions too. It is a great addition for your BBQs and on any grilled meats you prefer. In a bowl, mix 1 medium sliced onion, 1 tsp sumac, 2-3 tbsp AKKA vinegar, and salt pepper to taste. Let marinate for at least 30min. Serve on top of your meats or in a bowl on the table.
